Light dinners are always welcome. Here is a great new salad from which we cannot stay away.
INGREDIENTS
For the salad:
- 2 bundle of kale finely chopped
- 4 tablespoons parsley finely chopped
- 3 tablespoons fresh mint finely chopped
- 3 green onions finely chopped
- 2 tablespoons pine nuts toasted
- 2 tablespoons parmesan cheese shaved
- 2 tablespoons dried cranberries
- w tablespoons golden raisins
For honey lemon vinaigrette:
- 1 tablespoon balsamic white vinegar
- 7 tablespoons olive oil
- salt and pepper
- 1 tablespoon Dijon mustard
- 1 tablespoon honey
- 2 whole lemons squeezed
PREPARATION
Salad
- Mix the kale, parsley, mint, green onions, roasted pine nuts, golden raisins and cranberries in a large salad bowl.
- Add the below Honey Lemon Vinaigrette and let it rest for about 15 to 20 minutes.
- Add the shaved Parmesan cheese and serve
Honey lemon vinaigrette
- In a blender or food processor, mix all the above ingredients and whisk until smooth consistency.
- Taste to adjust the flavor.
